Hey guys so once I get access to my neighbors wifi, what are my options for a next step? I am pretty new at this so any and all help is much appreciated. Thanks!

Apart from using the internet connection, you could research MitM topics. Just google around a bit to get a feel for the concept and then try something out. If you need some help just pm me.

I want to enjoy the internet, sure. I would also like to know what my other options could be, and what are some ways I could hide myself besides MAC Spoofing and Static IPs?

ARP poisoning, DNS spoofing, and one of the best ways to hide yourself is disable the AP feature that logs your MAC address. But bare in mind that even if you disable it, or change you MAC address frequently, you can still get easily caught.

I don't know if this will work OK as I only tried this once, but you could change you MAC address to one that's already connected to the AP. Hiding by disguising yourself as a legitimate user.

So keeping that idea in mind I could, on a windows box, just open cmd and use
:
arp -a

and use one of the MACs I see listed?

If you have access to the home network... then the possibilities are endless!
Scan the network, see what is connected. Check open shares for connected computers, maybe there is a printer available - use it to print "I know what you did last summer...". Maybe there is a sat receiver with open httpd to control over the web.
Wind up Cain if on Windows or Ettercap if on Linux and sniff the shit out of the network. Have fun with blacksheep. See if you can remotely control other computer via windows services.
Blast away metasploit and burn through the network backdooring everything in sight. Download compromising pics, blackmail your neighbour, distribute child porn and see how your neighbor gets arrested, download excessive amounts of illegal content (assuming the ISP is monitoring everything)....

I did not think of that! Thank you! Doing all of that seems a bit reckless and could get me caught. I would just like to be able to use the internet and conceal myself or use their computer for further adventures..

Don't forget to ask your neighbor if he is proficient in martial arts or if he is a gun enthusiast, cause when he see his routers LEDs blinking like crazy, he may pay you a visit.  ;D

As long as you don't choose the gateway MAC or the multicast/broadcast MAC, you should be fine.

In all seriousness, you should first be aware of the legality of what you're doing. That way you know what to expect in the unlikely case that shit hits the fan.
Afterwards, as previously stated, the sky is the limit. If you're lucky and your neighbor is a tech guy and he like having gadgets and servers and shit setup in his house (as most IT people) then you're gonna have a great learning environment. Also don't forget that nobody likes douchebags, so if you're gonna abuse this to learn, at least don't fuck his stuff up.

I have looked into the legality of things and will not mess with any of his stuff, I just want to do a bit of exploring.

Then everything that Kulverstukas said, with the exception of distributing CP (still laughing on that one), should be fine. Do some recon, check if you can find out exactly what devices your neighbor has and what OS they're running, open ports and so forth.
