Right the Steak Debate...

I work part time as a Chef and I believe that when a steak is cooked past medium, the meat is ruined...

Anyone else have opinions on this?

I love steak rare but the best taste is always around the Medium-Rare spectrum.

I fully agree on this. In restaurant i always order steaks in medium, but if i had to choose between well done or rare i'd definitely go with rare.

My wife always orders well done steaks and if it's even a bit too reddish from inside she is like "i can't eat that". Have to say that it's bit annoying. :D

Medium is where i think its at. I am not sure what the original was based on label wise but here is my take on it
Raw- no heat just meat
Rare- you will rarely taste the cooked part
Medium- this is the half way mark where the good cooked flavor and the taste of the meat work together
well done- well done sir we have weponized the skillet, little meat flavor is left and we are chasing down the survivors.
Scorched- the point when it i become aware  i took to long on a post or project.

Usually medium rare but I do like a rare steak every once in awhile.
